Whip it Up Wednesday!! 10 minutes and 10.00 BUFFALO CHICKEN & bean Quesadillas
Ingredients
1 1/2 cups cooked and shredded chicken
1 (15 oz) can black/ pinto beans,
rinsed and drained
1/2 cup shredded cheddar cheese
1/4 cup Taco Bell hot sauce or
if you like it hotter Frank's hot sauce is good
1/4 cup sour cream
2 tbsp diced green onion (optional)
Instructions
In a small sauce pan combine chicken, sour cream, hot sauce, black /pinto beans
Stir & bring to a slight simmer,
remove from heat.
Heat a skillet to medium heat and lightly spray with Pam or butter
Place tortilla on the heated skillet.
Spread about a 1/4- 1/2 cup of the chicken mixture onto one half of the tortilla.
Sprinkle with cheese.
Cook for 3-4 minutes or until bottom side is golden brown. Fold the top of the quesadilla in half to close the quesadilla.
Flip and cook for another 2-3 minutes or
until cheese is melted.
